I’m back. Well, actually, I never left the kitchen — but I haven’t blogged in a while. Is anyone still there/here? 

When my friend Norma of Platanos, Mangoes & Me visited recently she reminded me of a Peruvian meal we prepared together back in the days of my Culinary Tour Around the World (2009).

FOODalogue was compromised a couple of time since 2009 and I had a hard time finding that post but find it I did (here) — and now, only a few days later, I had to try it again to see if it was as good as we remembered.

It was!

There are a sufficient number of recipes online. Go for one that includes soy sauce in the marinade. I paired it with something new — a cauliflower ‘rice’ seasoned with cilantro, scallion, ginger and garlic.

Note: I like cauliflower rice — and think it is more like rice than spaghetti squash is like spaghetti. I’ll be making both components again.

    The photo alone makes me want to try it. I make cauliflower and rice often and love it. This recipe sounds so delicious that I will have to give it a try.

      It is not really “rice”, just riced cauliflower.

    Hi Joan, so nice to see you on the web again, I’ve missed you! I’ve been off the grid for over a month now because my site was hacked. My IT guy said it was the most malicious attack he’s seen. It’s a nightmare getting everything back in order but we’re almost there. Now I need to make sure it never happens again.

    Love the Peruvian Chicken and Cauliflower Rice. I have a wonderful cookbook “Peru” and will look for a recipe there. Thanks for the inspiration.

    Fantastic. And I particularly like the treatment of cauliflower rice, which I like as well–as opposed to spaghetti squash, which I don’t particularly. Thanks for revisiting this post!

    I am making this when I get back from my trip. It’s a dish that i never forgot and the new additon of the rice cauiflower rice was a great companion. BRAVO!
