Meatless Monday

By stretching your imagination, you could call this a lasagna, a quesadilla or a Napoleon.It is an 8-inch spinach tortilla halved, then filled with layers of sliced zucchini and eggplant that had been “wilted” on a George Foreman grill and layered with sliced beefsteak tomato and a mix of fresh ricotta, fresh mozzarella and parmigiano reggiano and some dry herbs. A little oven and broil action and you get a toothy vegetarian delight — easily made from leftovers and/or pantry staples.

Watermelon Gazpacho

watermelon, grape tomatoes, red bell pepper, peeled cucumber, red onion, garlic, almonds, toasted Italian bread, olive oil, sherry vinegar, salt, red pepper flakes – blend + chill well! Perfect poolside treat!

Branzino: Stuffed and Baked

Branzino is the Italian name for a silver skinned fish familiar to the Mediterranean. It is marketed in the U.S. as European Seabass. In Spain it is called Lubina or Robalo. My fish market had it tagged as Greek and, according to Wikipedia,  in Greece it is called Lavraki.

My preparation was really simple and quick and it will make you feel like you’re on Greek Isle or somewhere in the Mediterranean when you sit down to eat it.

What Color is Your World?

I’m having a lazy Saturday. It’s raining and cold in FL – there are even freeze warnings and snow flurry predictions for some areas. A good day to stay inside.

While I sat at the table over lunch, I somehow (and suddenly) became aware that I was looking at a lot of green so I picked up up my camera and created a project that took the better part of the afternoon.

You’re Invited to a Viewing

Yes, a month and a half into the new blog and I’m still tweaking. I recently added a “Follow Me” button in the sidebar which you can click on to follow me on the various social media sites. I’m getting ‘social’ and adding my 2 cents here and there.

I also added a few new pages. It’s a work in progress, but I thought I’d make the announcement and swing open the doors anyway.

Just added:

SHOP. I started stocking the shelves. From the links provided you will be able to order some products from trusted online sources, like Amazon. Right now, we have a few shelves of products used (or admired) by FOODalogue. I hope this will be useful to those readers who have questioned where they could buy certain of the products I use, particularly those featured in the Nuevo Latino category. I will be adding more over time.

FOTOalogue. I have over 7500 photos on my computer. Here’s some of my favorite photos. You can see  a black + white series, some favorite travel scenes, and a new fledgling venture called FOTOcrafts where I am experimenting with transitioning some of my photos to product.

Coming Soon. I will be adding a photo series I’ve done called “Faces in Places”. This is one of my favorites because it captures the many different faces I’ve encountered in my travels.

To the real photographers out there: Yes, it’s point and shoot and it may not be up to your standards.

To the rest of you: I hope you’ll enjoy them. They give me much pleasure.
