Warm Codfish Salad with Avocado + Egg Yolk for Wordless Wednesday

Rich, briny, full of protein and unctuous healthy fats. See ingredients.

dry cod fish de-salted and chopped in cubes;
seasoned with saffron and smoked paprika;
sauteed with garlic and roasted peppers in olive oil
juice of 1 lemon
boiled egg (yolk only)
avocado chopped
Spanish stuffed olives
extra drizzle of olive oil and squeeze of lemon
lots of freshly ground black pepper

    Yolks are my favorite part of the egg, especially when creamy and soft. I usually suffer through the whites, but no more! If Joan can use yolks only, so can I!

      I suffer through them too and when the white broke while I was not-so-skillfully peeling, it was as good an excuse as any to not suffer any more.
