Fruit soup is a delicate balancing act — you want the sweetness of the fruit but you also want to balance that sweetness with a little acid and piquant heat. I think I accomplished just that for this month’s 5 Star Makeover Challenge: chilled soup.
This is such a quick and easy dish. It’s perfect for summer entertaining because it’s refreshing and light … a tantalizing tease for what follows.
And, it’s a NO-COOK soup. All you need is a blender and 10 minutes to prep. It can then be served immediately or chilled, but keep the 2 components separate until you’re ready to serve.
Serving Tip: To avoid soup splash up the side of the bowl and to center the drizzle, use funnels. A chopstick works well to spread the drizzle.
Ingredients for Watermelon Soup
2 cups watermelon chopped
1 tbs red onion minced
1 small clove of garlic minced
1/2 lime juiced
1/4 cup olive oil
1/2 tsp malt vinegar sea salt (or a splash of vinegar and a dash of salt)
liberal grind of black pepper
The cilantro mix was pre-made and stored in the freezer, but apparently it wasn’t something I did for the blog because I can’t find a recipe. At the time I froze it, I labeled the container “cilantro pesto”. But, it’s not exactly pesto. From what I tasted (and knowing my customary food pairings), the following ingredients (blended to your taste) would work well.
Ingredients for Cilantro Drizzle
handful cilantro
olive oil
cider vinegar
garlic
salt
red chili flakes
honey

I just love the shot glasses….A perfect Summer soup for a lazy hot day.
It’s funny how we always find a little surprise in our frezeer that comes in handy as this pesto did.

I use funnels all the time, and never think of telling about it. Well done. The soup looks delicious and would be, too! I only wish I would scrounge in my freezer and USE the stuff in there. That is definitely a goal. I freeze the most amazing stuff, and then never seem to use it again.

Wow, Joan. I adore cold soups and this is a definite winner. I like the idea of the tiny amount of red onion. And thanks for the tip about using a funnel. I always have splash from my soups and didn’t know how to correct it. Now if I can just find the right size funnel…

Watermelon makes a great soup, but especially when spiced up like this. I threw vinegar in my cantaloupe soup too, but didn’t post that ingredient, because you have to get it just right, so I was glad to see you did it too. (Need that acid).
