Pasta with Chestnuts, Porcinis + Baby Bella Mushrooms

I was still in a Tuscan state-of-mind a couple of days after my return. And I was missing my daily dose of p.a.s.t.a! Carb withdrawal is not easy (not that I’ve ever really withdrawn). I rummaged around and found a package of chestnuts and some dried porcini in the pantry. This seemed very Tuscan…so I marched forward, so to speak.
Mind you, I’d never used chestnuts with pasta and I don’t generally make a butter-based sauce (calories!), but what the heck? They do a lot of that in Tuscany and everyone looks great.
This is really very simple. I’m sure some version of pasta with a butter sauce has been done a gazillion times so it’s more a recommendation of ingredients to combine and a confirmation that it tastes good, no, make that delicious!

- rehydrated porcini mushrooms
- baby bellas sliced
- baby chestnuts (peeled + packaged)
- shallot minced
- garlic minced
- rosemary minced
- parsley chopped
- olive oil
- butter
- parmesan cheese
- freshly ground black pepper
- porcini salt
- Sautee rehydrated mushrooms and fresh mushrooms in a combination of butter and olive oil.
- Add shallot, garlic, minced, rosemary.
- Season to taste.
- Add cooked pasta to pan and coat thoroughly.
- Finish with fresh chopped parsley, generous amount of parmesan cheese, freshly grated black pepper and a sprinkle of porcini salt.

When I was in Puglia I had pasta for lunch and dinner every day – and didn’t gain an ounce. Why do we have such a fear of carbs in the US???

My take on it has always been “everything in moderation.” Pasta are good carbs and this sauce looks earthy and robust, as well as delicious.

I eat carbs and I’m not ashamed. You’re right…Italians eat pasta and drink wine, and they don’t have the obesity that we do in America. So, I say, go for it! Great ingredients that you rummaged around and found. I can’t say that chestnuts are in my pantry, but I always keep a bag or two of dried porcini mushrooms. I LOVE the flavor they impart. I think you created a beautiful meal.

The mushrooms give it such a hearty and comforting look. I don’t think I’ve had a chestnut cooked properly so somehow have never warmed up to them.
