I like beans as well as the next person, but I’m not particularly fond of a plain scoop of beans. No, no! While I try to incorporate them into meals on a regular basis because they are purportedly a good source of protein, they’ve got to be slow-cooked, dressed, sauced, tossed, or otherwise treated to be worthy of a place on my plate.

Whether you cook beans from the dried stage or buy them canned, they are a relatively inexpensive and filling component of many meals. Garbanzo, a/k/a chick peas, ceci beans, or whatever you call them, are a popular legume…and a pantry staple in the FOODalogue kitchen.

Warm Garbanzo Salad

  • garlic minced
  • parsley chopped
  • plum tomato chopped
  • whole lemon, juice + zest
  • extra virgin olive oil
  • fennel seeds

  • smoked paprika
  • oregano
  • salt + pepper

  2. Heat oil and dry seasonings in hot skillet.
  3. Add beans, scallion, garlic, tomato, parsley.
  4. Reduce heat and cook medium-low for about 20 minutes till vegetables are cooked down and beans are semi-toasted.

I recently learned to eat chickpeas, after a lifetime of thinking I hated them (childhood stuff). This dish would hit a home run with my husband, who loves garbanzos. I think I’d like it, too.

  5. I use garbanzo beans in salads and love them almost every other way. But I’ve never tried frying them in this manner. Love the recipe and will put this one in my recipe file.
