Spicy + Savory Tomato Marmalade

Do you top your burger with a slice of tomato and a slice of onion?  A pickle perhaps? Ketchup? I’ve got a much better idea.

I made this dish and used it in lieu of any other topping. While it has all the basic flavors of ketchup and the usual toppings, it’s much more than a condiment. The flavors are very concentrated and depending on the amount of chili you add, it kicks! I made it up as I went along and overdid the chili so I’ll leave that quantity to you if you care to try the recipe. My lips still burn. It’s better than collagen!

I’ll definitely be making this again, particularly during the summer when tomatoes are plentiful. I think it would make a great topping for fish or any grilled meats.

Ingredients
1 pint ripe grape tomatoes, halved + minced
1/2 vidalia (sweet onion), thinly sliced + minced
1 garlic clove (whole, remove after cooking)
olive oil
1/4 cup balsamic vinegar
dried chili
[quantities approximate]

Sweat onion and garlic in olive oil on medium-low heat, add chopped tomatoes, s+p and begin cooking down. Add chili and balsamic vinegar and cook on low heat for about 1/2 hour.

I served the burger with sweet potatoes that were sliced and baked in the oven which was a great counterpoint to the heat of the marmalade…plus I love crispy sweet potatoes. :)

Finishing Touch (and just because I had it) was a sprinkle of Sweet Onion Sugar. Frankly, I can’t say that it added anything that the balsamic vinegar had not already supplied.

    This is absolutely wonderful! How great to have this on fish or meat.

  5. This is very similar to a chunky relish! I love it…especially over a nice piece of grilled sea bass and a crisp white…now we’re talking!

  6. I would adopt this for a lot of things, including eggs which I normally don’t care for, unless there is a tomato sauce next to them.

  14. Love this idea, Joan instead of ketchup which is so full of sugar. I like texture, so this is a great solution and as you say can be used with so many different dishes.

    Great idea to use up the summer bounty, plus it has to be good on burgers, fish, grilled pork tenderloin etc. I do a red onion marmalade that I like. This has given me ideas for more condiments made from fruits and vegies. Thanks Joan

  19. I do something exactly like this – ok – similar – just no onion and no chile – garlic, tomatoes – slow roasted (at the end of the summer when I have so many extras…) and freeze them. Canning is a great idea. This stuff is deadly delish. I recognized it immediately – and should maybe stretch my wings and try yours. I need to post mine, too… but in the fall this year.
