Expresso Sugar Salmon + A Perfect Side

The FOODalogue kitchen has always been a ‘no-sugar’ zone. I don’t use it in my coffee or other beverages — and I’m not known for making sweet treats. In fact, the pound of sugar I have for guests who request it has been in the cabinet for probably longer than its shelf life (oops). But, I recently discovered gourmet flavored sugars and felt compelled to try them. Back in February I posted Green Bamboo Rice + Sweet Onion Sugar Shrimp. Since then, I’ve been haunted by an expresso sugar I saw in the store and just went back to pick it up (along with a ginger sugar that seemed tasty). 

Though the company advertises these sugars as a complementary ingredient for baked goods and sweet dishes, I knew right away that I wanted to try them in some savory applications.

Salmon. Brush with olive oil, sprinkle and pat down sugar (about 1/2 tsp), broil.

Salad. Shucked corn, radicchio, fennel, and grapefruit supremes, S+P.

Vinaigrette.  Juice of the grapefruit blended with olive oil and a drizzle of honey.

Pat on the back for the chef. Really good call on pairing the flavors of fennel and honey with a little citrus to make the perfect complement to the expresso sugar salmon.

  2. Joan, what gorgeous photos of the salmon and the corn salad. I’m not familiar with these new sugars. Actually I don’t use much sugar either. I’ll definitely have to check this out.

  4. I will have to keep my eye out for some flavoured sugars. I have only seen vanilla sugar so far. I am more inclined to eat savoury dishes than sweet too…let’s forget the strawberry cake I made for company the other day:D

    I thing coffee is wonderful on just about anything! I’ve been rubbing my salmon with brown sugar for years, but never thought to add expresso! Great idea!
