I started out making roasted beets as a simple side dish but I’d been to the green market and had a plethora of fresh vegetables so, little by little, I started adding things. The end result was a vegetable salad with a warm feta dressing and a sprinkle of toasted sesame seeds.
And, I’m not going to lie. Those leftover veggies and dressing are being tossed with pasta tomorrow.
Beets were sprinkled with olive oil, S+P and roasted in the oven until fork tender.
Tomatoes were placed in high oven until skin started to burst.
Haricots Verts were placed in microwave for 90 seconds (or you could give a quick blanch).
Let vegetables come to room temperature and then heat dressing made of olive oil, 1 clove garlic, oregano and fresh lemon juice.
Add feta to warmed dressing and pour over vegetables.
Finishing Touch. Sprinkle of white truffle salt and a dash of toasted sesame seeds.

and offer the excuse that I’ve found 90 seconds creates a perfect balance between raw and cooked (al dente). And it obviates unbalanced results (mine) of blanching.

Feta dressing just draws me in Joan. This is something I would love and would be versatile as the seasons change.
I am like you in that I hate to waste and love to recycle food! This salad is great and has in it one of my fav: beets!
