Peas in a Pod + Heirloom Tomato Pasta

The motto on my FoodBuzz profile is “when in doubt, make pasta“.  It, in fact, is the credo of the FOODalogue kitchen these days especially when it comes to vegetables. They seem to more frequently accompany pasta rather than a protein.

Here’s a throw together dish that’s simple, quick and delicious. Of course, it helps if you visited your local green market over the weekend and picked up fresh peas and heirloom tomatoes. They’re so good, I began eating both right out of the bags at the market. Fresh and raw. Popping them in my mouth as I walked along and visited the various stands. In fact, it’s a wonder there was enough left to make a dinner.

‘Sauce’ Ingredients
heirloom tomatoes halved
shelled peas + pods
garlic chopped
olive oil
a sprinkle of crumbled bacon
a splash of white wine
red pepper flakes

Give a quick saute to ingredients in olive oil to break down and tenderize vegetables, add a splash of white wine, lower heat for a few minutes. Add red pepper flakes, s+p.

Toss everything with spaghetti.

And if you want to take it to the next level…

Finishing Touches: Freshly grated parmesan, cubed mozzarella and toasted panko crumbs with ground almonds.

    You can bet I will be at the Green Market next weekend! Those peas look wonderful, as does the pasta. Heirloom tomatoes are my favorite with so much more flavor than regular tomatoes.

    That is a great motto! I always turn to pasta when everything else fails, or when I am too lazy to come up with something different. I love the “sauce” for this pasta dish. It’s making me hungry!

    me’canta the simplicity and delicious factor of this pasta; of which i’m typically not a big fan of. tomatoes on the other hand, i looooove me sum…
