Here’s another 1-2-3 quick + easy vegetable meal…born of necessity. I had 2 days of leftover veggies in the refrigerator that I wanted to use and I wanted a healthy lunch.
It’s no big deal. It’s not the über recipe. And you’ve probably done meals like this yourself many times. However, it was tasty, colorful and it made me feel like I was taking good care of myself…and that’s a good thing.
Plus I wanted to show you a new product. I picked up this rice blend (basmati, red rice and lentils) one day and then forgot about it until I was scrounging around the pantry looking for some inspiration to make lunch.
I put about 1/4 cup of the mix in a pot to start cooking up and then I started pulling out the leftovers.
Finishing Touch: Drizzle of Sesame oil with chile pepper flakes.

You do take great care of yourself Joan. I will have to keep my eyes open for a similar rice blend.
I try…
What a beautiful and healthy vegetarian dish! My husband would love this.
I love dishes that make you feel like you’re taking care of yourself. I’ve seen that lentil blend in the store but haven’t picked it up yet. It intrigues me now.
Thanks for sharing the rice blend Joan. That’s one I’d be interesting in trying. It’s obvious that you take care of yourself, as Billy said back in the day, “you look marvelous”! Have a great weekend.
thank you, dahling
Well you just gave me a recipe for my veggie clients. I can always count on you when I am stuck……Thanks
I try to incorporate vegetables in every meal.
Looks lovely and healthy and what my kids would eat, especially when hungry!
