This one is so simple! And quick. It involves 2 products and little-to-no cooking. Spaghetti Squash is an interesting vegetable, especially when you pair it with something tasty like black beans. You can roast it in the oven or – equally satisfying and quicker – microwave it as I did this time. It takes less than 10 minutes and during that time you can open the can of beans.


Si es Goya, tiene que ser buena.* Make sure you use Goya black bean ‘soup‘. I use it for every meal that includes black beans because it comes in a very well-seasoned thick sauce. Even if I don’t want sauce, I just drain it off. The beans are still tastier. The only enhancements I make, on occasion, is a drop or two of vinegar (cider or white), a sprinkle of dried oregano and a splash of hot sauce. IMO, when it comes to black beans, this is a ‘why-reinvent-the-wheel‘ product and I’ve written about it before.

Joan, that’s a great pairing–spaghetti squash and black beans. I make my own black bean soup, but when I’m in a rush, I love the Goya black bean soup. I’ve never made the spaghetti squash in the microwave, but will try that next time. I never get over the wonder of finding the “noodles” inside the squash. Guess foodies never get too old to play with their food.
I’m gonna get me one of those spaghetti squash Joan. I love those babies but never thought of using the micro! Sounds good with a big scoop of black beans. Thanks for the tips.
Anything with spaghetti squash is a winner for me…even just plain old butter and pepper.
